Healthy homemade granola is easy!
Ingredients

4 SERVINGS
- 3 cups old-fashioned rolled oats (quick cooking)
- 3/4 cup slivered almonds (chopped)
- 1/2 tsp. ground cinnamon
- 1/4 cup coconut oil
- 1/2 cup honey (or maple syrup)
- 1/2 Tbsp. vanilla extract

Directions
- Preheat oven to 300 degrees F. Lightly spray large baking sheet with Pam cooking spray.
- Toss the oats, almonds and cinnamon in a large bowl. Set aside.
- In a small saucepan, melt coconut oil and honey together. Whisk in the vanilla extract until combined. Pour over the oats and toss to coat. Make sure all of the oats are moistened.
- Spread onto the baking sheet and bake for 20 minutes, stirring half-way through.
- Allow the granola to cool completely. Store in an airtight container at room temperature for up to three weeks.
