- 1 tsp. xanthan gum (omit if your blend already contains it)
- 5 Tbsp. tapioca starch (Expandex modified, or replace with an equal amount of tapioca starch/flour*)
- 1/2 tsp. kosher salt
- 2 eggs (100 g, weighed out of shell + 2 egg yolks, 50 g at room temperature, beaten)
- 1 Tbsp. extra-virgin olive oil
- 2/3 cup warm water (plus more as necessary)

It is finicky about time cooked. Two minutes is exactly 2 min! I let it rest for an hour for hopes of hydrating the dough. It’s decent but had intermittent weird flavors, perhaps chlorine from my water? Will attempt again bc it’s ok, and I always appreciate GF foods to try
