Great recipe. I did add a few things not on the list as i use most recipes as a guide. i added;
A splash of balsamic vinegar
A splash of Apple cider vinegar
a large squeeze of tomato paste (as i didn't have all the tomotoes) and added a little left over passata from last nights pasta. (100mls)
I also slow roasted the tomatoes in the oven a few days before as they were going soft.I also made a fresh pesto to serve with the soup
Basil leaves, pine nuts, fresh garlic and olive oil. the pesto really made it taste wonderfully fresh.
