    I used soy milk and olive oil as substitutes to make the pancakes vegan and they turned out delicious. Also halved the recipe and just added the soy milk and oil to the whole thing until it was easily mixed. I was dubious at first because it took on a dough-like texture but that actually held up while in the pan. Made the thickest, fluffiest pancakes. Added chocolate chips and blueberries as well and they were delicious.

    I don’t necessarily have a go to recipe for pancakes as I usually try out different ones based on what’s in the pantry so anything from vegan to normal. But they’re usually pretty similar in ingredients likewise in taste. Though normally I make the recipe for the batch I’m going to cook and not make a batch of batter mix so maybe that has something to do with this. Unfortunately they weren’t all that great, besides the flat they completely stuck to pan so I had pancake mess, they didn’t cook properly inside so they were soggy not fluffy. They also tasted pretty bland, I don’t use extras on my pancakes usually just have with some butter if plain or if it’s with fruit like I made today I eat them alone but I had to cake these in sugar as they just didn’t have an nice flavor for me. I hate to leave bad reviews but I’m honest and this was one of my worst pancake experiences of my life lol 😂
