  • 1 carrot (shredded)
  • 1 onion (small, shredded)
  • 1/2 cup canning salt (pickling /)

  • 4 cups vinegar

    Taste is really nice. I used some fresh dill weed and some dried. 8 cups of liquid seemed like a lot of brine for about 13 cups of shredded veggies. I reduced the amount of water by 2 cups and it was still too much liquid. I added cornstarch to thicken the relish a bit. This made the relish extra tangy, which I like. If I make it again, I will reduce the amount of liquid more.
