  • 1/2 teaspoon sichuan peppercorns (ground, optional)
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 75 dumpling (dim sum, or wonton wrappers)
  • 3 tablespoons canola oil (or peanut oil)
  • 4 cups chicken stock (Chef Nobu's, or Roasted Vegetable Stock or store bought low-sodium chicken or vegetable broth)

  • 1 cup shitake mushroom (stems, washed well)
  • 2 stalks celery leaves (attached)
  • 1/4 cup rice vinegar
  • 1/4 cup hoisin sauce
  • 2 teaspoons toasted sesame oil
  • 1/2 teaspoon toasted sesame oil (hot)
