- 2 Tbsp. oil
- 1 lb. chicken breast (boneless and skinless, cut into 1/2-inch pieces)
- 2 bunches green onion (scallions – about ½ – ¾ cup)
- 1 Tbsp. garlic (minced, about 2 large cloves)
- 1 can cream of mushroom soup (10.5 ounces)
- 1/2 cup chicken stock (or broth, can also use beef)
- 12 oz. frozen mixed vegetables
- 2 small red potatoes (skin on, chopped in small pieces, about 2 cups)
- 2 tsp. dry marjoram
- 1/4 tsp. salt
- 1/2 tsp. ground black pepper
- 1/2 cup sharp cheddar cheese (shredded)
- 1/2 cup pepper jack cheese (shredded, or Monterrey Jack)
- 1/2 cup heavy cream
- 1 prepared pie crust (top and bottom – I like to use the kind you have to unroll)
