- 1/2 cup brown rice (uncooked short grain, or white if you prefer)
- 1 chicken bouillon cube (or vegetable bouillon for vegetarian)
- 1/4 cup salsa (I used Pace medium)
- 2 cups water
- 16 oz. black beans (whole, or pinto beans, undrained)
- 1/4 tsp. ground black pepper
- 1/2 tsp. garlic powder
- 1 lowfat plain yogurt (~ 1/4 to 1/3 cup container, or light sour cream!)
- 2 Tbsp. light mayonnaise
- 2 1/2 tsp. taco seasoning (I used mild, low sodium is preferred)
- 3 flour tortillas (large, I like whole wheat, but they don’t have them in Korea)
- 3/4 cup shredded cheese (I used part-skim mozzarella)
