  • 1 tablespoon vegetable oil
  • 6 ounces bacon
  • 1 onion (large, finely chopped)
  • 28 ounces cannellini beans (rinsed)
  • 14 ounces diced tomatoes
  • 1/3 cup barbecue sauce
  • 2 tablespoons worcestershire sauce
  • 2 tablespoons brown sugar
  • toast (thick, buttered, to serve)

    Directions

    1. Heat oil in a large frying pan over moderate heat. Add bacon. Cook, stirring, 3 minutes, or until crisp. Transfer to a heatproof plate. Chop bacon coarsely.
    2. Add onion to pan. Cook, stirring, 3 minutes, or until soft. Add beans, tomatoes, sauces and sugar. Cook, stirring occasionally, 18-20 minutes, or until mixture thickens slightly. Serve beans on toast. Top with bacon.
