These bagels turned out amazing! I added vital wheat gluten to unbleached all purpose flour to get a higher protein content and it did the trick. I had chewy bagels. I will make again, but smaller they turn out big like some commercial bagels.

I added habaneros to some and raisins and thyme to others. Didn’t hurt the rise much. Great recipe.

They are delicious, even more so if you use different seasonings on top like Tuscan garlic seasoning, yum if you use it with smoked chicken in a sandwich
