- 1 1/4 cups powdered sugar (sifted)
- 1 lemon (very finely grated using a Microplane, substitute 1 tsp [5 ml] pure vanilla extract for a traditional angel food cake)
- 1 cup cake flour (sifted)
- 3 cups strawberries (fresh, halved)
- 2 Tbsp. maple syrup
- 1/4 cup flour (unbleached all-purpose)
- 1/4 cup cane sugar
- 1/4 cup pistachio nuts (unsalted shelled, chopped finely)
- 2 Tbsp. unsalted butter
- 1 pinch kosher salt
- 1 cup greek yogurt (vanilla, preferably a high-fat variety, I use a better-than-whipped-cream 10% m.f. variety)
