- 22 lb. tomatoes (fresh or whole frozen)
- 3 cups onions (chopped)
- 6 cloves garlic (minced)
- 1/4 cup olive oil
- 2 Tbsp. dried basil
- 1 Tbsp. dried oregano
- 1 Tbsp. dried thyme
- 1 Tbsp. black pepper (or to taste if you're not as much a pepper fan as we are)
- 1 Tbsp. sugar (or honey, or to taste)
- 2 Tbsp. salt
- 2 tsp. crushed red pepper flakes (or to taste)
- lemon juice (bottled, or citric acid: 1 Tb. lemon juice OR ¼ tsp. citric acid for EACH pint and 12-oz jars; ½ Tb. lemon juice OR ⅛ tsp. citric acid for EACH half-pint jars, I usually use citric acid, as it doesn't add more liquid to our sauce)

good. tho i use a hot pepper from last year that i had frozen. had to add two large cans of crushed tomatos to try and dilute it. still pretty spicy ! still yummy
