- 320 grams all purpose flour (2½ cups, 11oz, bread flour recommended)
- 1 1/2 tsp. instant yeast (Fleischmann’s)
- 120 mL evaporated milk (I used ¼ cup whole milk mixed with ¼ cup 10% cream)
- 1 large egg (beaten)
- 56 grams unsalted butter (¼ cup, ½ stick, 4 tablespoons, 2oz, softened)
- 1 tsp. salt
- 4 Tbsp. fine granulated sugar (I used 2 tablespoons)

Beautifully formed, deliciously light buns. Excellent video & instructions.Total time was about 4.5 hours, but I’m finiky slow. I substituted 1.5 TBSP honey for granulated sugar and although it seemed like the dough would not blend together at first, especially with the butter, eventually it does as long as you keep scraping the bowl & give it the length of minutes she suggests after each addition. Weighing the dough balls made for uniform finished buns. Baking was slightly longer in my oven than the 15-18 min. ; I needed 22.
