Hoisin Lamb Chops with Coleslaw

  • 1/3 cup hoisin sauce
  • 2 teaspoons soy sauce
  • 1 tablespoon fresh ginger (finely grated)
  • 2 cloves garlic (minced)
  • 2 teaspoons vegetable oil
  • 4 green onions (chopped)
  • 12 lamb chops (trimmed)
  • 2 teaspoons lime juice
  • 3 teaspoons palm sugar (or brown sugar)
  • 2 teaspoons fish sauce
  • 3 drops sesame oil
  • 1 red chili (finely chopped)
  • 1/2 chinese cabbage (shredded)
  • 3 baby bok choy (shredded)
  • 1/2 cup fresh mint leaves

    Directions

    1. Whisk together hoisin sauce, soy sauce, ginger, garlic, oil and 2 green onions. Add lamb and toss to coat. Set aside to marinate for 1 hour.
    2. Meanwhile, whisk together lime juice and sugar. Add fish sauce, sesame oil and chili and stir to combine. Add cabbage, bok choy and mint and toss to coat. Set aside.
    3. Preheat a large frying pan over medium-high heat. Working in batches, cook lamb for 2-3 mins per side. Remove from heat and let rest for 2 mins. Serve with coleslaw.
