- 1/4 cup vegetable oil (neutral, such as grapeseed or safflower)
- 8 oz. extra firm tofu (drained and blotted dry)
- 2 Tbsp. sauce (Korean gochujang, see headnote)
- 2 Tbsp. toasted sesame oil
- 2 garlic cloves (grated on a Microplane-style rasp, or minced)
- 1 1/2 Tbsp. balsamic vinegar
- 1 Tbsp. soy sauce
- 1 lb. Japanese eggplant (or, about 3 medium-size or 2 large Chinese, tops removed, eggplants sliced into 1-inch pieces on a diagonal)
- 2 Tbsp. hoisin sauce
- 1 Tbsp. fresh ginger (grated)
- 1 Tbsp. mirin (rice wine)
- 4 scallions (thinly sliced on a diagonal)
- 1 Tbsp. toasted sesame seeds
