  • 1/2 duck (Chinese barbecue, finely shredded)
  • 4 spring onions (thinly sliced)
  • 2 teaspoons hoisin sauce (+ extra, to serve)
  • 1 teaspoon ginger (finely grated)
  • 20 wonton wrappers
  • vegetable oil (for deep-frying)

    Directions

    1. Combine duck, spring onions, hoisin sauce and ginger. Distribute between wonton wrappers. Brush edges lightly with water and roll up to enclose filling.
    2. Heat oil in a wok over medium heat. Working in batches, deep-fry wontons for 2-3 mins, until golden and cooked through. Drain on paper towels. Serve immediately with hoisin sauce.
