- 1 1/2 sweet onions (large, chopped)
- 1 tsp. kosher salt (use less if using vegetable bouillon)
- 2 cups green peas (uncooked split, ~450 grams dry, picked over and rinsed, makes 4 cups cooked approx)
- 5 cups boiling water
- 1 vegetable bouillon cube
- 1 handful spinach (rinsed)
- 1 tsp. fresh lemon juice (reserve the zest)
- smoked paprika (to garnish, or use regular paprika if necessary, optional)
