  • 3/4 cup Swerve (or granulated sweetener of choice. I also tested these using 1/4 cup brown sugar + 1/4 cup stevia + 1/4 cup Swerve)
  • 1/2 cup gluten free all purpose flour
  • 1/2 cup coconut flour
  • 1/4 cup psyllium husk
  • 2 tablespoons whey protein powder (you could add a flavored whey here)
  • 1 teaspoon baking powder (or to make this recipe corn-free use 1/2 teaspoon cream of tartar and 1/2 teaspoon baking soda)
  • 1/4 teaspoon kosher salt (optional)
  • 2 bananas (ripe, mashed, you could replace this with an pulpy, mashed fruit or veg)
  • 1/2 cup water (you could replace this liquid with milk or juice)
  • 1/2 cup oil
  • 3 large eggs (lightly beaten)

    Satisfing and tasty. I substituted yogurt for the oil to save on cals and fat. still turned out good. I also added cinnamon and nutmeg for some added flavor.
