- 1 qt. warm water
- 1/2 cup salt
- 1/4 cup brown sugar
- 2 Tbsp. Herbs de Provence
- 1 onion (quartered)
- 2 qt. orange juice
- 1 Orange (sliced)
- 2 bay leaves
- 1 Tbsp. peppercorns
- 4 cups ice
- 1 Shady Brook Farms® Fresh Young Bone-In Turkey Breast (6-7 pounds)
- 1 stick butter (softened)
- 2 Tbsp. Herbs de Provence

Directions
- In warm water add salt and brown sugar, stir and allow to fully dissolve.
- Add remaining brine ingredients (2 Tbsp. Herbs de Provence, onion, orange juice, orange, bay leaves, peppercorns) and finally ice to fully cool. **I would make it with fresh bunches of thyme, rosemary, and oregano, bouquet garni-esque, they would have more flavor for the brine**
- Once cold, place turkey in brine and fully submerge.
