Fragrant and flavorful roasted chicken thighs make an easy weeknight dinner.

- 4 bone-in, skin-on chicken thighs (8 oz. each)
- 1 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 Tbsp. salted butter
- 1 1/2 tsp. Herbes de Provence

Directions
- Preheat the oven to 400°F.
- Season the chicken thighs on both sides with the salt and black pepper. Place thighs skin side up in a 9-inch square baking dish.
- Cut the butter into four cubes and place one on top of each chicken thigh. Sprinkle the Herbes de Provence evenly over the chicken.

I've made this multiple times now and it really is a very no fuss quick dish to make. Just season as instructed place butter and pop in oven. Which I'm all for after work day. Family really enjoys. And pairs well with numerous sides.

Absolutely awsome! I threw in some carrots onion and few mushrooms along with 1/4 C of chicken stock! perfection.

Super simple and tasted amazing! One of my go-to weekday recipes. I didn't need to add as much Herbs de Provence as the recipe called for though.
