- 1/2 cup fresh basil (chopped)
- 1/3 cup Italian parsley (fresh, chopped)
- 1/3 cup pine nuts
- 2 garlic cloves (peeled)
- 2 Tbsp. lemon juice
- 1 tsp. salt
- 1/2 tsp. red pepper flakes
- 1/4 tsp. sugar
- 1 Tbsp. olive oil
- 4 zucchini (medium, cut into 1/2 inch slices, about 3 cups)
- 5 cups marinara sauce (the best you can find)
- 16 lasagna noodles (no-boil)

I liked the tofu ricotta. I only used one pack of tofu and it was more than enough. I also didn’t add any sugar, seemed completely unnecessary. I used a lot more veggies (zucchini, spinach, carrots, onion, bell pepper) and topped it all with daiya mozzarella. It turned out great!
