Description
This colourful and herby vegetarian dish is healthy, filling and tastes great too. The beetroot is blitzed in a food processor until it’s the same size as couscous and then then served with roasted beetroot, spiced seeds and halloumi.
Ingredients

- 150 grams beetroot (peeled)
- 100 grams puy lentils (cooked)
- 1 banana shallot (finely chopped)
- 10 grams finely grated fresh ginger
- 100 grams cucumbers (pickled dill, or gherkins, finely diced)
- 20 grams chopped fresh dill (each roughly, flatleaf parsley and mint)
- 1 1/2 Tbsp. red wine vinegar
- 2 Tbsp. olive oil
- lemon juice (Squeeze of, optional)

- 300 grams halloumi (cut into slices)
- 2 Tbsp. olive oil
