  • 3 onions (cut into thick rounds with the skins left on)
  • 1 handful thyme leaves (plus more herbs to put around the bird, to serve)
  • 50 grams butter (softened)
  • 300 milliliters dry white wine
  • 1 1/2 teaspoons sea salt (flaky)
  • 1 teaspoon green peppercorns (dried, crushed)
  • 1 tablespoon thyme leaves (finely chopped)
  • 300 milliliters white wine (medium)
  • 600 milliliters stock (good)
  • 2 teaspoons jelly (redcurrant)
