- 16 oz. firm tofu (or extra firm)
- 1 cup soy sauce
- 1 cup marsala
- water (to cover)
- 1 cup unseasoned dry bread crumbs
- 1 cup panko (or 2 cups total of regular dry unseasoned breadcrumbs)
- 2 tsp. salt
- 2 tsp. pepper
- 2 Tbsp. fresh thyme (course chopped)
- 4 Tbsp. canola oil (for frying, or more as needed)
- 1 cup yellow onion (halved and thinly sliced)
- 2 cups crimini mushrooms (sliced)
- 1 cup marsala
- 2 tsp. salt
- 2 tsp. pepper
- 2 tsp. Herbs de Provence
- 3/4 cup soy creamer (Silk)
- 3 Tbsp. canola oil (or olive oil)
- 4 russet potatoes
- 6 cloves roasted garlic (place in oven safe dish with olive oil and bake at 350°F for 20 minutes)
- 1 1/2 Tbsp. fresh rosemary (finely chopped)
- 1/2 cup soy creamer (Silk)
- salt
- pepper
