- 1/4 cup apple cider vinegar
- 2 Tbsp. olive oil
- 2 cloves garlic (chopped)
- 2 tsp. Dijon mustard
- 1/2 tsp. kosher salt
- 1 Tbsp. honey
- 2 Tbsp. lemon juice (1-2 lemons depending on how juicy they are)
- 2 Tbsp. fresh parsley (chopped)
- 2 Tbsp. fresh dill (chopped)
- 2 Tbsp. fresh chives (snipped)
- 1 1/2 lb. salmon fillet (cut into 4 pieces)
- olive oil spray (I love the “Misto!”)
- dressing (Herbed Buttermilk, or dressing of choice)
- 6 cups salad greens (choice, such as butter, red and green leaf, romaine, baby greens etc.)
- 1/2 pt. grape tomatoes
- 8 bell peppers (miniature, or 1 large bell pepper, cut into strips or rings)
- 1 cucumber (large, sliced, English cucumbers have less seeds)
- fresh vegetables (Additional, as desired)
- lemon slices
