  • 100 grams unsalted butter (cold)
  • 1/2 teaspoon salt
  • 3 tablespoons cold water
  • 2 red onions
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons butter
  • 1 tablespoon water
  • 3 tablespoons extra-virgin olive oil
  • 5 basil leaves (large)
  • 3 Heirloom tomatoes (large)
  • 200 grams cherry tomatoes (red and yellow)
  • 2 tablespoons milk (or egg wash)
  • 1 mozzarella (ball)
  • leaves (Some small basic, to decorate)

    Directions

    1. Begin by making the pastry. In a large bowl and the flour and cold butter and rub with your fingertips until the mixture resembles breadcrumbs. You can also make in a food processor.
