- 6 baking potatoes (large, (about 3 3/4 lbs), unpeeled and baked)
- 3 Tbsp. promise buttery spread
- 2 tomatoes (large, chopped)
- 3/4 cup low fat cheddar cheese
- 1/2 cup lowfat sour cream
- 2 green onions (large, finely chopped (optional))

Directions
- Preheat oven to 425°.
- Cut potatoes in half lengthwise. Remove about 1/3 of the potato pulp, leaving 1/2-inch shell (save pulp for another use), then cut potatoes in half crosswise. Brush potatoes with Promise® Buttery Spread.
- Arrange potatoes on baking sheet. Bake 15 minutes or until potatoes are crisp. Evenly top with cheese and tomatoes. Broil 1 minute or until cheese is melted. Top with sour cream, then sprinkle with green onions.
