- 2 onions (medium, chopped)
- 2 carrots (large, peeled and chopped into 1/4" chunks)
- 1 stalk celery (chopped into 1/4" chunks)
- 4 cloves garlic (minced)
- 1 Tbsp. chili powder
- 2 tsp. smoked paprika
- 1/4 tsp. cayenne pepper
- 1 red bell pepper (seeded and chopped into 1/2" chunks)
- 1 yellow bell pepper (seeded and chopped into 1/2" chunks)
- 2 sweet potatoes (medium, peeled and cut into 1/2" chunks)
- 15 oz. tomatoes (whole, and their juice, diced or squeezed with your hands)
- 1 Tbsp. tomato paste
- 12 oz. beer (bottle of, I used a pale ale)
- 2 cups stock (veggie, or water, I used veggie stock)
- 15 oz. black beans (can of, rinsed and drained)
- salt (to taste)
