- 1/2 cup red wine (or broth, but the wine really adds a good flavor)
- 3 cups low sodium vegetable broth
- 1/2 tsp. salt
- 1/4 tsp. ground pepper
- 1 can diced tomatoes (no salt added, 15oz)
- 2 medium carrots (chopped)
- 2 rib celery (chopped)
- 2 Yukon Gold potatoes (chopped)
- 1 can tomato sauce (8oz)
- 1/2 tsp. Kitchen Bouquet (optional for color)
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. cornstarch
- 1 cup frozen peas

Definitely takes more than 40 minutes from prep to cook time, but it's worth it.
I recommend to use wine, extra balsamic vinegar, and spice to your preferences to balance out the tomato base.
I also used oyster mushrooms instead of button mushrooms and it was excellent.

Delicious. I don’t eat meat, but even my husband who does, loved it! Definitely worth the time to make it, which I would say isn’t that bad either. I used my food processor to help chop and mince all my veggies.

This is good, however it took me over 2 hrs to cook bc there is an issue with “simmering” the potatoes and the recipe doesn’t say how long to cook. Very frustrating and I found many others had this issue too after I looked on the comments on the website
