- 1 1/2 lb. fresh green beans (trimmed & cut into ½-inch pieces)
- 2 garlic cloves (minced)
- 1/4 head cabbage (diced)
- 2 zucchini (quartered and cut into ½-inch pieces)
- 1 1/2 lb. yukon gold potatoes (washed and quartered)
- 8 cups chicken broth (homemade is best)
- 28 oz. Roma plum tomatoes (peeled, San Marzano are best)
- 3 Tbsp. tomato paste
- 1 can water (28 ounces)
- 2 tsp. bouquet garni
- 1/4 cup chopped fresh parsley
- 1 tsp. rosemary leaves (fresh, minced)
- 1/8 tsp. crushed red pepper flakes
- 2 tsp. seasoned sea salt (Lowry’s)
- 1/2 kosher salt
- 1/2 tsp. freshly ground black pepper
- 1 Parmesan cheese rinds (small, optional)
- 5 oz. frozen peas (optional)
- freshly grated Parmesan (or Gruyere cheese, garnish)
