- 1 stalk celery (chopped)
- 1 green bell pepper (medium, cored, seeded and chopped)
- 1 red bell pepper (medium, cored, seeded and chopped)
- 4 cloves garlic (finely chopped)
- 3 Tbsp. chipotles in adobo (finely chopped, . Be careful, if you haven't used this before. Chipotles in adobo have a wonderful flavor but add A LOT of heat! Feel free to leave it out)
- 1 Tbsp. dried oregano
- 2 tsp. ground cumin
- 1 Tbsp. chili powder
- 2 tsp. sea salt
- 28 oz. diced tomatoes (with their liquid)
- 15 oz. tomato sauce
- 3 cups red kidney beans (cooked or canned, drained)
- jalapenos
- avocados
- green onions
- sour cream
- grated cheddar cheese
- 1 1/2 cups canned black beans (or cooked, drained)

Excellent- second time I've made it!
Used 1 Tablespoon chopped canned adobo chili with chipotle.
Doubled veggies- in recipe,
Except- I substituted = 1/2 of each red, green, yellow and orange bell peppers
Add 1-2 cups of Frozen Riced cauliflower & broccoli blend
1 Sweet potato diced
Frozen lentil and veggie penne pasta 1-2 packages
2 of 15 oz petite diced tomatoes with onion and garlic
2 extra 15 oz cans of tomato sauce
