  • cooking oil (spray)
  • 1 sheet pastry dough (frozen shortcrust, thawed)
  • 2 medium potatoes (peeled and chopped)
  • 1 tablespoon vegetable oil
  • 1 onion (small, finely chopped)
  • 1/2 pound ground pork
  • 3 button mushrooms (thinly sliced)
  • 2 teaspoons flour
  • 2 ounces frozen peas
  • 1 tablespoon butter (chopped)
  • salad (mixed green, to serve)

    Directions

    1. Preheat oven 400°F. Spray 2 metal pie pans (5 inch each) with oil and line with the pastry dough. Chill for 15 mins.
    2. Meanwhile, cook potatoes in a medium saucepan of boiling water until tender. Drain and mash until smooth.
    3. For the pork mixture, heat the oil in a medium frying pan over medium heat and add the onion, pork and mushrooms. Cook, stirring with a wooden spoon and breaking up clumps, for 5 mins or until browned. Stir in flour and cook for 1 min. Add 1/3 cup water and the peas then cook and stir for 2 more mins or until the mixture thickens. Remove from the heat and cool slightly.
    4. Place pie pans on a baking sheet and bake for 5 mins. Remove from oven and fill with the pork mixture. Using a 1/2 inch star piping nozzle, pipe mashed potato over filling. Dot the top with butter and bake tor 20 mins or until golden. Serve with salad.
