- 4 oz. chopped green chilies (can Organic, mild)
- 1/2 yellow onion (diced)
- 4 cups baby spinach (Fresh, chopped)
- 2 zucchini (Small, sliced into half moons then quartered)
- 1 sweet potato (yellow or orange, peeled and cubed in ½ inch cubes)
- 1/2 tsp. freshly ground black pepper
- 1 1/2 tsp. sea salt
- 1 tsp. garlic powder
- coconut oil (for greasing your pan)

- 16 oz. taco meat (maybe leftovers from a previous meal)
- 4 oz. chopped green chilies (can Organic, mild)

- 1 sweet potato (White, or yam, peeled and cubed in ½ inch cubes)

This was a very healthy casserole to serve for breakfast, and as a dairy free option for a potluck gathering. The second time I made it, I added two additional eggs and used three small sweet potatoes. This worked well, as the first time it turned out watery, although I followed the directions carefully. Keeping it in the oven an extra 5 minutes helped a bit with the water. With using a dozen eggs, and all of the spinach, it seemed very loose. This is possibly due to not including cheese, which is something I need to avoid, but is a binder for many recipes. This is a recipe I will definitely make again as it is so delicious!
