- 2 avocados (small, diced)
- 3 Tbsp. lime juice (fresh squeezed)
- lime juice (I use my fresh-frozen, for recipes like this.)
- 1 cup grape tomatoes (small, cut in half)
- 1/4 cup green onion (thinly sliced, or more if not using cilantro)
- 1/2 cup chopped cilantro (optional)
- sea salt (to taste)

There was a can of heart of palm in the pantry and I was chuffed to come across this recipe. Full disclosure: I'm not a fan of avocado. If I liked avo, the recipe could be five stars.
What I dislike about avo is the texture, so I added corn to make up for the mushiness of the avo and it worked for me. Marinating the onion in a generous amount of lime juice for a few mintes before adding it to the avo helps.

I adapted this recipe since I didn’t have tomatoes or avocados, and added parsley and garlic and avocado oil instead YUM!

Everyone loved this one, even the kids. They said that it tasted almost like a ceviche, minus the fish, of course. We prepared it the next day, and added a little corn. That was even better.

This Salad was incredible. We plan on having it again tomorrow. Very refreshing. We only made a half size recipe the first time as there is only two of us. The only change we made was to not add as much lime juice to the recipe.
