This salad was a great easy meal, but it felt like something was missing. I’m going to toss some sunflower seeds in it tomorrow when I eat the leftovers to see if that crunch is the missing piece!

I adapted this recipe since I didn’t have tomatoes or avocados, and added parsley and garlic and avocado oil instead YUM!

Everyone loved this one, even the kids. They said that it tasted almost like a ceviche, minus the fish, of course. We prepared it the next day, and added a little corn. That was even better.

This Salad was incredible. We plan on having it again tomorrow. Very refreshing. We only made a half size recipe the first time as there is only two of us. The only change we made was to not add as much lime juice to the recipe.
