- 1 lb. beef (85/15, drained after cooking as much as you can)
- 3 stalks celery (small diced)
- 1 Vidalia onion (large, small diced)
- 1 leek (sliced and rinsed super well, discard the green top)
- 1 cup baby lima beans (frozen)
- 1 cup fresh corn
- 28 oz. tomatoes (whole muir-glen, Squish them up by hand)
- 1 cup green beans (canned is cool just drain them and rinse!)
- 4 cups low sodium chicken broth
- 3 cups water
- 1 tsp. minced garlic
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. onion powder
- 1/4 tsp. thyme (and parsley, dried)
- 3 olive oil (table spoons of good)
