  • 3 stalks celery (small diced)
  • 1 Vidalia onion (large, small diced)
  • 1 leek (sliced and rinsed super well, discard the green top)
  • 1 cup baby lima beans (frozen)
  • 1 cup fresh corn
  • 28 ounces tomatoes (whole muir-glen, Squish them up by hand)
  • 1 cup green beans (canned is cool just drain them and rinse!)
  • 4 cups low sodium chicken broth
  • 3 cups water
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon thyme (and parsley, dried)
  • 3 olive oil (table spoons of good)
