- 1 Tbsp. corn oil (or any other neutral vegetable oil)
- 1/2 medium onion (diced finely, a red onion works too but is not as strong)
- 3 button mushrooms (with stem, sliced, about 1 cup)
- 2 garlic (very small cloves of, don’t omit!)
- 300 grams broad beans (tin of, drained and rinsed well, a bit over 1 cup, use less for firmer wheatbeef)
- 1/2 cup red wine (or a dark, sweet beer like Affligem or Westmalle Dubbel if using in stew)
- 3 Tbsp. nutritional yeast
- 1 Tbsp. tomato paste
- 1/2 tsp. cacao powder (optional, for colour)
- 1 Tbsp. raw cane sugar (or other sugar, don’t omit!)
- 2 1/2 Tbsp. less sodium soy sauce
- 2 tsp. marmite (or vegemite)
- 1/2 tsp. mustard powder
- 1/4 tsp. ground coriander
- 1/2 tsp. ground cumin
- 1/8 tsp. ground black pepper
- 1 cup vital wheat gluten (tightly packed, tap the cup a few times when filling)
