- 1 onion (large, diced)
- 1 Tbsp. olive oil
- 1/3 cup low-fat greek yogurt (or mayo if you prefer)
- 3 Tbsp. lemon juice
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 bunch chopped fresh cilantro
- 3 chile peppers (jalapeno, finely chopped, ribs and seeds removed unless you like it a little spicy)
- 2 large eggs (lightly beaten)
- 1/4 cup almond meal (or plain dried breadcrumbs)

- 1/2 cup greek yogurt (low-fat)
- 4 tsp. lemon juice
- 1 tsp. Sriracha sauce
- 1 clove garlic (minced)
- 1 Tbsp. cilantro (a rounded tablespoon!)
