    I added up a little bit more sweet potato and about 4 tbsp of water to the batter bc I found quite dry, and it turned out well. I made 2 batches at once and got 22 full cupcakes (given that I added more volume to the batter), sooo, just so you know, the amount of batter in the recipe doesn't afford to fill the cups. I used canola oil instead of avocado oil, which was fine. I also used dried cranberries and crushed pumpkin seeds instead of pecans. The frosting turned out so creamy, but not that sweet, so I added some more syrup (I substituted with agave syrup in the whole recipe, and I'm happy with the outcome. If you do so, make sure to check on the equivalences between agave syrup and the other sweeteners). It was the first time I tried a frosting made from sweet potato, and it was better than I had expected lol. All that said, this recipe is better than many others I've read/tried for flour free cupcakes 💚
