- plain greek yogurt (a dollop, or a spoonful of avocado, to make a creamier dressing, optional)
- 8 oz. baby greens (mixed)
- 1 zucchini (small, ribboned*)
- 1 yellow squash (small, ribboned*)
- 2 medium carrots (ribboned*)
- 1 bell pepper (thinly sliced)
- 1 cup snap peas (trimmed and halved)
- 2 cups cherry tomatoes (or grape tomatoes, halved)
- 2 ears sweet corn (fresh, grilled)
- 1 avocado (ripe, sliced or cut into cubes)
- 1/2 cup crumbled feta cheese (or goat cheese, optional)
