- 3/4 cup white whole wheat flour (or substitute all-purpose flour or 1:1 baking flour to make gluten free)
- 1/3 cup light brown sugar
- 1/4 tsp. ground ginger
- 1/4 tsp. kosher salt
- 6 Tbsp. unsalted butter (melted, or substitute melted coconut oil to make vegan/dairy free)
- 2 cups strawberries (small-diced, about 10 ounces, divided)
- 1 tsp. cornstarch
- 1 Tbsp. lemon juice ( freshly squeezed, from about 1/2 small lemon)
- 1 Tbsp. granulated sugar (divided)
- 1/2 cup powdered sugar (sifted)
- 1/2 tsp. pure vanilla extract
- 1 Tbsp. milk (any kind you like)

Super quick & easy! I did make some changes, however. To start, I added one teaspoon of vanilla & a half teaspoon of cinnamon to the crust. I also used maple syrup instead of brown sugar. For the butter, I melted 2 tablespoons & mixed it with 4 tablespoons of tahini for a richer flavor. I used fresh ginger & mixed it in with the strawberries along with some chopped walnuts. I also mixed the cornstarch & lemon juice with the strawberries instead of sprinkling over the berries. Finally, I used coconut sugar when layering instead of brown sugar. I refrigerated it overnight, skipped the glaze & served it with Greek yogurt. My husband loved it!

quick, easy, and delicious. I made the glaze with just powdered sugar and lemon juice. It adds a nice balance to the sweetness.

My family love it .. will reduce the sugar next time I make it 😋 made it without the vanilla glaze but it is jus as delicious

This is fantastically simple to make and extremely delicious. Just made it because we bought so much fresh strawberry recently and was worried they would go mushy before we had a chance to eat them all. I also added some desiccated coconut that we have in the cupboard and hardly ever use. Everybody here says thank you so much!

The bars were ok not very crunchy. I’ll add more brown sugar to the crust next time and more sugar to the strawberries

The is a fantastic recipe, I doubled it and make an entire pan and serve it over vanilla Greek fat free yogurt
