I made a few changes, substituting safflower oil for the coconut oil, and cutting it back from 6 to 4 Tbs. I know it would have tasted better with the coconut oil, but I'm trying to avoid saturated fats.... Apart from that, the bread was very tasty and something I would definitely make again.
I also substituted Amber Agave Syrup (Nectar) for the honey, as I'm not a big fan of honey. Additionally, I used a stevia/sugar blend to reduce the overall number of calories, and Bob's Red Mill Organic Whole Wheat Pastry Flour with excellent results. I would recommend seeking out this fine-textured superior quality flour.
