- 1 1/2 lb. pork tenderloin (trimmed and cut into bite-sized pieces, about 1/2")
- salt
- pepper
- 1 Tbsp. chili powder
- 4 cloves garlic (minced)
- 1 cup white onion (chopped)
- 2 cups green bell pepper
- 3/4 cup low sodium chicken broth
- 2 tsp. oregano
- 15 oz. hominy (white or golden, rinsed and drained)
- 2 Tbsp. cornmeal (optional - leave this out if you prefer more of a soup!)
- 1/2 cup chopped cilantro (I like a lot!)
- salsa verde (store bought or for tastiest results, this easy homemade one !)
- avocado (optional)
