- 3 Tbsp. tomato paste
- 6 sundried tomatoes (chopped, about ¼ cup, not packed in oil *)
- 1 Tbsp. mellow white miso
- 2 Tbsp. nutritional yeast
- 1 1/2 cups dry pasta (choice, we used gluten free fusilli pasta *)
- 15.5 oz. red kidney beans (drained and rinsed)
- 15.5 oz. cannellini beans (drained and rinsed)
- 1 lb. frozen mixed vegetables (*, see notes)
- 2 Tbsp. onion flakes (dried minced)
- 2 tsp. onion powder
- 1 Tbsp. garlic powder
- 1 tsp. Italian seasoning
- 2 tsp. dried basil
- 2 tsp. dried oregano
- 2 tsp. dried parsley
- 2 bay leaves
- 1 pinch cumin (+/- to taste)
- 2 1/2 tsp. sea salt (+/- to taste *)
- 1/4 tsp. black pepper
- 3 cups baby spinach (fresh, or greens of choice)
- crushed red pepper flakes
