this health recipe was delicious. Idid add a little extra cheese and used ground beef instead only because most healthy recipes call for chicken and we can't have chicken every night. lol.

It was fine. It took a lot of prep and a lot of dishes for the final result, which I'm not sure was worth it.

Really tasty - a bit of a faff though - took quite a while longer than specified. Also - "serves 9"?! I got 5 servings out of mine and I followed the recipe and measurements precisely except for missing out the beans. I'd make it again though. Might try minced beef and brown rice instead of chicken and quinoa next time. Thanks - enjoyed it!

I don’t usually make American “healthy” versions of Mexican food, but when I read the ingredients I could see how it could work. It was delicious! I added some more spice and a little bit more salt. I also added shredded cabbage on top with hot red sauce I kept from when I got street tacos the other day. This recipe doubles well. I had another dish of it ready to go in the freezer and it tasted just as good. Made me feel good took

Used brown rice and subbed sour cream for Greek yogurt. (Also went a little over on the cheese.) Delicious!

It reminds me a lot of a Chipotle bowl. I didn't have brown rice, so I used white. I did 1/2 C yogurt and 1/2 C sour cream b/c my husband prefers sour cream. I agree - it was a bit more time consuming on the prep, but it was ok.

Great tastes all around however I was expecting A casserole and thus ended up being a to die for mush that works welll with chips and Ade if pinto beans

Wonderful dish. The prep time takes a bit more than posted, and I was out of yogurt, so I replaced it with Ranch dressing. I also had some left over crumbled sausage, and added that, which gave it a bit of depth My nine year-old asked for more a few hours after dinner, which was unprecedented.

Definite do-over at our house. I used a pound of lean ground beef instead of chicken and it was delicious!!

Great very yummy. Used quinoa- next time will only use 1/2 cup.. used a poblano pepper rather than a green bell and was also good!

Great recipe enjoyed by everyone in my family! I made some modifications - added diced zucchini and instead of kale, I used shredded brussel sprouts and purple cabbage. I also substituted bulger for the quinoa. I will definitely make this again.

Excellent! I used ground turkey instead of chicken. I also used brown rice as opposed to quinoa because I though it was just too much protein and I really didn't want to eliminate the black beans.

The husband loved it and compared it to a burrito without the shell. I personally didn't like it all too much but I am a VERY picky eater but I still think it's decent.

This was so great. Did take about an hour but we had food for three days! I think I used too much Greek yogurt but it still turned out delicious.
