- 1/2 tsp. salt
- 1/2 lb. green beans (trimmed)
- 1/2 lb. carrots (about 2 - 3 medium, peeled and cut into batons)
- 1/3 lb. portobello mushroom caps (about 2 medium, sliced)
- 1 red onion (medium, sliced into 8 wedges)
- 2 Tbsp. olive oil
- salt (to taste)
- black pepper (to taste)
- 1/3 cup cashew butter (raw)
- 1/4 cup coconut flakes (raw, or shreds**)
- 1 Tbsp. soy sauce (or wheat-free tamari, for gluten-free)
- 1 Tbsp. nutritional yeast
- 1 tsp. onion powder
- 1/2 tsp. garlic powder
- 1/2 tsp. dried thyme
- 1/4 tsp. dried oregano
- 1/4 tsp. dried rosemary

- 6 oz. tofu (baked savory, sliced)
