- 1/2 cup coconut flour
- 1 tsp. baking powder
- 1/4 tsp. sea salt (grey)
- 1/3 cup organic cane sugar (unbleached)
- 1 lemon (organic, washed, because you are using the skin, it is absolutely important to use organic lemon to avoid ingesting large quantities of pesticides)
- 2 eggs (large free-range organic)
- 1 Tbsp. pure vanilla extract
- 2 Tbsp. fresh lemon juice (approx. 1 whole lemon juiced, optional)
- 1/2 cup extra-virgin olive oil
- 1/3 cup pure maple syrup
- 1/2 cup nut milk (your choice, I used a homemade cashew milk)
- 1 cup rhubarb (sliced)
- 3 cups rhubarb (cut)
- 1 cup strawberries (organic, fresh or frozen)
- 1 lemon zest (organic)
- 1 Tbsp. fresh lemon juice
- 1 tsp. pure vanilla extract
- 3/4 cup icing sugar (or 1/2 cup maple syrup)
- 1/2 cup icing sugar (organic)
- 2 Tbsp. water
- gluten (free option:)
- 1 cup spelt flour (Replace, sprouted, with other gluten-free flours, such as a mix of buckwheat flour, coconut flour, chickpea flour, tapioca flour, etc.)
- 1 tsp. apple cider vinegar (to the dry mix)
- 1 tsp. baking soda (to the wet mix.)
