- 2 large carrots (diced, about ¾ cup)
- 1 celery stalk (diced, about ½ cup)
- 1/2 yellow onion (or small white, diced, about ½ cup)
- 2 garlic (gloves, minced)
- 1 tsp. dried basil
- 1 tsp. salt
- 1 tsp. thyme (I like using fresh thyme)
- 4 cups chicken broth
- 1 lb. boneless skinless chicken breast (cut into 1 inch cubes)
- 17 oz. potato gnocchi
- 2 cups baby spinach

we really liked it. i also added mushrooms as well. made somee crusty heated bread to go with it. Delicious all four family members loved it! simple and quick!
