Love this recipe! I've been making it for a while now. I love sweet potatoes and greek yogurt separately. So combining them is even better! I also love the fact that this is a healthy alternative to regular mashed potatoes. Sweet potatoes have a lower glycemic index and is a healthy carb. Those good carbs combined with the high protein of the greek yogurt makes this a perfect side dish for those looking to eat healthy. Another good thing is that my wife and kids like it too!
