- 1/2 cup part skim shredded mozzarella cheese
- 1/4 cup low fat milk (or skim, can use dairy alternative)
- 1 Tbsp. olive oil
- 1 delicata squash (small, peeled, deseeded, and cubed)
- 8 oz. salmon fillet (uncooked, I used two 4oz salmon fillets, cubed)
- 2 scallions (chopped)
- 2 cups kale (stems removed and chopped)
- 2 Tbsp. fresh thyme leaves (or a sprinkle of)
- pepper (optional)
- garlic powder (optional)
