- 1 cauliflower (large, broken down roasted till browned at 350 degrees F.)
- sea salt (fresh ground, fresh ground for the cauliflower)
- ground black pepper (fresh, fresh ground for the cauliflower)
- 15 oz. garbanzo beans (can of reduced salt, rinsed a few times, the reduced salt kind taste much better and have a better texture than the regular canned)
- 1/4 cup celery (chopped small)
- 1/4 red bell pepper (chopped small)
- 2 Tbsp. zante currants
- 12 oz. silken tofu (blended)
- 2 garlic (small cloves grated)
- 2 Tbsp. Dijon mustard
- 2 scallions (chopped)
- 1/2 tsp. kosher salt
- 1/2 tsp. black pepper
- 4 paprika (shakes)
